The Manufacturing Process
The extraction process takes place thanks to a series of innovative machinery.

Harvesting
The olives are harvested by hand or with aids. They are then placed in perforated crates to keep them fresh.

The olives are weighed and each customer has their own identified batch.


removal of leaves and washing
The olives are cleaned of leaves and twigs; then washed with clean water
Cold pressing
In this step, the olives are transformed into oil paste.


Controlled temperature kneading
The olives are kneaded at a temperature always kept below 27°C to ensure cold extraction.

Oil extraction
In this step, centrifugal force separates the oil from the water and pomace.
