SICILIAN CULTIVARS
In our lands, with passion and respect, we grow the most prized Sicilian cultivars.
The round Iblea with its fruity notes and intense aroma from which we extract an oil with a fruity taste with herbaceous notes and a delicate almond aftertaste.
Nocellara Etnea with rich pulp and a strong flavour, whose oil is aromatic and fruity with rich notes of ripe tomato and artichoke which make this oil an ode to Mediterranean flavours.
La Moresca which gives a balanced and delicate oil. Its balanced flavour, with light nuances of aromatic herbs and aromatic notes of almond.
FROM THE OLIVE TO THE BOTTLE: AN ART EXECUTED WITH MASTERY
Custodians of the millenary heritage of our lands, we are committed to transforming the best olives into an oil that embodies authenticity and excellence.
The union between the quality of the raw materials and the accuracy we use in the transformation process gives each drop of oil its distinctive pre-eminence.
Our olives, the result of scrupulous harvesting, are immediately taken to the oil mill and processed to guarantee maximum freshness. Within a short 48 hour period, the olives are pressed into a premium oil, knowing that time is crucial to preserving their taste and quality.
We work tirelessly to protect the oil, a precious treasure, from any contact with oxygen. Our continuous production cycle ensures that each phase, from harvesting to pressing, takes place in a protected environment, safeguarding every subtle nuance of flavor and aroma.
Our dedication to quality is manifested in the use of a cold extraction process, a methodology that preserves the sensorial characteristics of the oil intact.
