4. MALAXATION

After crushing, the olive paste moves to malaxation.
During this stage, the paste is slowly mixed at a controlled temperature. The aim is to help the small oil droplets within the paste come together, making the following extraction phase more effective.
Malaxation requires great care. Time and temperature must be managed precisely: excessive or incorrect processing can reduce freshness and aromas, while balanced handling helps preserve the natural qualities of the oil.
It is a quiet but essential stage. Here, the technology of the mill and the experience of the operator work together to respect the raw material and preserve quality, balance and sensory identity.
