2. LEAF REMOVAL AND WASHING

When the olives arrive at the mill, they may contain leaves, small branches, dust or other impurities from harvesting.
Leaf removal separates the olives from excess plant material. This is an important step because leaves and residues, if present in large quantities, can negatively affect the production process and the oil’s profile.
After leaf removal, the olives are washed with water to remove soil, dust and surface impurities. Washing prepares the fruit for crushing and helps keep the whole production process cleaner.
This stage may seem simple, but it is essential: processing clean olives means respecting the raw material and creating the best conditions to obtain a fresher, cleaner and more pleasant oil.
